Baked sweet rice cake (年糕) recipe
A recipe from one of my mom's friends.
Ingredients
- 1 lb bag of sweet rice powder (3 elephant brand)
- 1 large can coconut milk
- 1.5 cups milk
- 1.5 cups to 2 cups sugar
- 3 whole eggs
- 1 tsp baking powder
- 1 oz or 5 oz butter
- Optional: Sesame seeds, red bean paste
Instructions
- Preheat oven to 325–350 degrees
- Combine all ingredients except the sweet rice powder — the coconut milk and milk combines to 3 cups of liquid
- After all the ingredients are thoroughly mixed, fold in sweet rice powder and mix well
- Optional: Sprinkle sesame seeds on top before baking or add red bean paste in the center of mixture
- Bake at 325–350 degrees for 1 hour
