Egg sandwich recipe

A recipe from Vickie. A dupe of egg sandwiches from Japanese convenience stores.

Ingredients

Instructions

  1. Boil eggs for 12 minutes
  2. Peel off shell, separate egg yolk and egg white
  3. Mash egg yolks with a spoon and mix with Kewpie mayo (to taste, but enough that it's not yolk dust)
  4. Add salt and pepper to taste, maybe parsley
  5. Cut up egg whites and mix in
  6. Butter bread
  7. Smoosh eggs into bread
