Egg sandwich recipe
A recipe from Vickie. A dupe of egg sandwiches from Japanese convenience stores.
Ingredients
- 2-3 eggs per sandwich
- Kewpie mayo, to taste
- Salt & pepper, to taste
- Parsley (optional)
- Soft Japanese bread
Instructions
- Boil eggs for 12 minutes
- Peel off shell, separate egg yolk and egg white
- Mash egg yolks with a spoon and mix with Kewpie mayo (to taste, but enough that it's not yolk dust)
- Add salt and pepper to taste, maybe parsley
- Cut up egg whites and mix in
- Butter bread
- Smoosh eggs into bread
